What to do with Cranberry Beans?

This past weekend I visited my favourite farm near my house in Richmond Hill, and I noticed that cranberry beans were on sale. This is great news for me and my mom because we freeze a lot of cranberry beans to enjoy during winter!

All you have to do is remove the beans from the shells, measure out two cups and add them to a zip-lock bag! We buy around 1 bushel of beans, and we can make two meals per month that can feed 4 people for the whole year.

Note: freezing does not affect the texture or taste of the bean.

We usually make a soup with tomatoe juice, carrots, onions and smoked meat, to which we add a bag of beans and it’s very delicious! But you can add also them to chilli or any other dried bean recipe - just remember they will cook much faster than the dried variety, even the frozen beans will cook much faster than the dried beans.

Since it’s the year of the pulses, now’s the time to take advantage of the many varieities that they come in - start by freezing in-season Ontario cranberry beans!
