It’s sweet pea season!
While I love to eat them raw, this soup is sure to satify your sweet pea craving.
Sweet Pea Soup
Makes 4 servings, takes 40 minues
3 cups Sweet Peas
1 Bay Leaf
1 Tablespoon Olive Oil
750 ml Water
Cheese to garish
De-shell sweet peas and rinse them.
Peel and the chop the potatoe and onion into 6 big pieces. Add the oil to the botton of a pot, and turn to medium. When the oil begins to heat up, add the chopped onion and potatoe. Stir unti the onion becomes translucent.
Add the water and a bay leaf, bring to a boil. Boil the potatoes and onions for 15 minutes. When the time is up, add the the sweet peas, and set a timer for 5 minutes. Peas cook very quickly!
After the five minutes are up, remove the pot from the heat and blend the potatoe, onion and sweet peas. I like to serve the soup garnished with cheese and pepper. This soups makes a great work lunch - all you have to do is add it to 500 ml jars!
