With the summer in full swing, there are many in-season fruits to enjoy right now! However, I’m always looking for ways to enjoy local in-season food throughout the year. Lucky for me there are many options to pick from.

My family and I used to make syrup, jam and compote to extend the time of year when we get to enjoy local in-season fruits. This year, I am trying to freeze more fruits to incorporate them in pastries throughout the year.

This past weekend, my family and I went sour cherry picking, and I thought this would be a great first attempt at freezing fruit! Thanks to Ontario’s protected Greenbelt, there are a few places where I can get my sour cherry fill.

Frozen Sour Cherries

Washed the sour cherries, de-pitted them, and measured out about 3 cups per zip-lock bags - this quantity is enough for a pie!
