Very easy and even more delicious!
- 2 large Ontario tomatoes
- 1 cup spinach finely chopped
- 1 tbs yellow onion finely chopped
- 1 clove garlic minced
- 1 tbs basil
- 1/2 cup cream cheese
- 1/2 cup sour cream
- 1/2 cup Canadian cheddar cheese grated
- 1 tbs Parmesan cheese
- 2 tbs olive oil
- salt and pepper to taste
Cut both tomatoes in half, separating top and bottom. Use a sharp knife to remove the insides, and a spoon to scoop them out. Rub skin with olive oil and place on baking sheet. In bowl, mix remaining ingredients, except for the Parmesan and most of the cheddar cheese. Scoop the mixture into the tomatoes evenly. Sprinkle with remaining cheese. Bake in oven for about 10 minutes at 350 degrees or until tomatoes are soft and cheese is bubbly. This dish makes a very delicious lunch, or side dish for a dinner.
